Spinach Cottage Cheese Curry
We have used Indian cottage cheese in this curry, you can use potato or tofu in the place of cottage cheese. This is rich, creamy, and mildly spicy curry and you can serve it with rice or bread.
Ingredients
Yield – 3
- Spinach blanched and blended – 2 cups
- Tomato – 1 large
- Ginger – 1 tsp
- Garlic clove – 4 small
- Green Chili – 1
- Red Chili Dry – 1
- Ghee – 2 tbsp
- Cashew – 5 pcs
- Curry Powder – 1 tsp
- Dry Mango powder – ¼ tsp
- Salt – ½ tsp
- Cream – 1 tsp
- Butter – 1 tsp
- Cottage Cheese diced – 150 gm
- Black Cardamom seed ground – 1 pod seed powder.
Method
- In a blender add green chili, ginger, red chili, and garlic, add 1 tsp water, and blend it to make a smooth paste.
- In another blender add tomatoes and cashew and blend to make a fine paste.
- Heat the wok on low flame, add ghee and cardamom powder, stir for 1 minute then add ginger and garlic blended paste.
- Cook the paste for 3 minutes, then add tomato and cashew paste and stir. Cook for another 2 minutes.
- Then add curry powder, salt, and dry mango powder, mix them in the paste and cook until ghee comes over the paste.
- Add spinach paste and mix it with curry paste, cook for 2-3 minutes.
- Add cottage cheese and mix them, cook for 1 minute.
- Add butter and cream and mix them well.
- Spinach Cottage Cheese Curry is ready, serve hot with some toppings of cream.

Pinto Bean Vegetarian Curry
This curry is made with Pinto beans, it is rich and creamy and mildly spicy curry, cooking steps are very easy, and you can make it at home.
Ingredients
Yield – 3
- Butternut Squash diced – 1 cup
- Coconut milk – 1 cup
- Olive oil – 1 tbsp
- Salt – 1 tsp
- Water – 1 cup
- Mustard Seeds – ½ tsp
- Cumin Seeds – ½ tsp
- Red Pepper powder -1/4 tsp
- Turmeric powder – ¼ tsp
- Curry Powder – ½ tsp
- Pinto Beans – 1 cup
- Fresh Cilantro chopped – ¼ cup
Method
- In a pan, add the squash, water olive oil, salt, mustard seeds, cumin seeds, pepper, and turmeric powder, and boil it.
- Cook for 15-20 minutes and stir occasionally.
- Add coconut milk and stir, add beans, and cook for 10 minutes.
- Turn off the heat and place this curry in a serving bowl and garnish with fresh cilantro.
Spicy Tofu Curry
This is a medium spicy tofu curry and best for those who are on a vegan diet, serve this curry with rice or pasta.
Ingredients
Yield – 3
- Potato peeled and cubed – 2 medium
- Tofu cubed – 2 ½ cup
- Ginger – 1 tsp
- Garlic cloves – 4
- Cashew – ¼ cup
- Curry powder – 2 tbsp
- White Onions sliced – 2
- Lemon Grass chopped – 2 stalks
- Olive Oil – 3 tbsp
- Water – 2 ½ cup
- Brown sugar – 1 tbsp
- Salt – 2 tsp
- Coconut milk – 1 cup
- Red Pepper Flakes – 1 tsp
Method
- In a blender add garlic, lemongrass, and onion and make a smooth paste.
- Heat a wok on low flame and add oil, add blended mixture, and stir for 2 minutes. Add pepper flakes, mix and stir.
- Add tofu and cook till heated completely.
- Add coconut milk, water, and potatoes and bring to boil.
- Reduce heat and simmer for about 20 minutes, stir occasionally.
- Add the salt and sugar and remove from heat.
- Serve hot.
Creamy Spinach Chicken Curry
This is another addition to the curry section, Creamy Spinach Chicken Curry is a rich, velvety, and smooth curry with a balance of flavors with silky soft chicken.
Ingredients
Yield – 6
- Chicken pieces – 25 ounces
- Spinach blanched and blended – 3 cups
- White Onion chopped – 1
- Garlic cloves – 6
- Ginger – 1 tsp
- Tomatoes – 2
- Salt – 1 tsp
- Chili Powder – ½ tsp
- Curry Powder – 1 tsp
- Cumin Seeds – 1 tsp
- Olive Oil – 3 tbsp
Method
- In a blender add ginger and garlic and make a paste.
- Heat the wok and add oil, then add onion and blended paste. Cook for 3-4 minutes.
- Add tomatoes and cook for 4-5 minutes.
- Add curry powder, salt, and pepper powder, stir, and cook for 1 minute.
- Add chicken and stir for 2 minutes and cook for 5-8 minutes.
- Add blended spinach to the wok and mix it. Add one cup of boiled water and stir.
- Cook until the chicken is soft. Serve hot with rice or bread.
Tasty Salmon Curry
This salmon curry is fresh and lite with a tangy and spicy flavor, it is very easy to make and can be served with rice, pasta, noodles, or you serve as curry soup.
Ingredients
Yield – 4
- Salmon Fillet – 2 lb.
- Curry Powder – 1 ½ tbsp.
- Salt – 1tsp
- Red Onion diced – ½ cup
- Olive Oil – 1 tbsp.
- Fish Sauce – ½ tsp
- Medium Ripe Mango – 1 ½ small
- Cilantro chopped – 1 cup
- Garlic Clove minced – 4
- Sweet Potato fired or baked – 1 small
- Water – 1 cup
- Lime juice – 1 tsp.
Method
- Heat a wok on medium flame, add olive oil, garlic, and onion. Sir for 2 minutes.
- Add curry powder and salt, stir, and add water.
- Then add fish sauce, salmon, and potato, stir, and cover the lid for 5-7 minutes.
- Add mango and cook for 3 minutes. Turn off the flame if salmon and potatoes are cooked.
- Add cilantro and lime and mix it.
- Serve hot with rice.

Mixed Vegetable Chicken Curry
This chicken curry is medium spicy with flavors of vegetables and the aroma of spices, serve with rice or a one-pot meal.
Ingredients
Yield – 3
- Carrot peeled and diced – 1 large
- Green Beans Trimmed and chopped – 2 cups
- Chicken Breast – 1 lb.
- Chicken Broth – 2 cups
- Curry powder – 1 tbsp.
- Fish Sauce – 1 tsp
- Broccoli Florets – 1 cup
- Lime Juice -1 tsp.
- Yogurt – 1 cup
- Salt – ½ tsp.
- Black Pepper – 1 tsp.
- Indian Garam Masala -1/2 tsp.
- Garlic minced – 4
- Ginger minced – 1 tsp.
- Olive Oil – 1 tbsp.
- Shredded Cheddar Cheese – 1 ½ cup
- All-purpose Flour – 1 tsp.
Method
- Heat the pan and add water to boil, then added carrot, broccoli, and beans for 2 minutes.
- Let the vegetable cool down. Then transfer into a mixing bowl, add chicken, half quantity of salt, ½ tsp of olive oil, and ½ tsp of curry powder. Mix them all.
- Take a baking dish and grease it with butter and place the vegetable first and cover with chicken and one cup of cheddar cheese.
- Preheat the oven to a heat 175 degrees C
- Mix yogurt with flour.
- Heat a wok, and add olive oil, garlic, and ginger. Stir for 2-3 minutes.
- Add chicken stock, fish sauce, and mixed yogurt and mix them well.
- Add curry powder, garam masala, pepper, and salt.
- Turn off the heat, and pour this curry on the chicken, add the remaining cheese.
- Bake it for 30-45 minutes.
- Serve Hot.
