Pork Cooking Tips

Pork should be well done but never overcooked or it will become tough and stringy. According to U.S. department of agriculture, as measured by a meat thermometer, of 170 F and all other cuts of pork to 185 F.

Perfect pork cooking is also depending upon the toughness and thickness of the cut, pressure cook for 18 to 20 minutes per pound. You can crisp pork in a broiler, or baste a glaze in an oven, after pressure cooking.

Stuffed Pork Chops 

Serves – 4 persons

Double Pork Chops – 1 ¼ inch thick

Onion – finely chopped

1 medium (5 oz.)

Celery - finely chopped

¼ cup

Fresh Bread - crumbled

Pork Chop Spice Powder

2 tbsp.

Fresh Parsley - chopped

½ cup

Salt

Heavy Cream

2 tbsp.

Dry White Wine

1 cup

 Method of making Stuffed Pork Chops 

  1. Trim excess fat off chops, slit chops at lower end to make pockets.
  2. In a frypan, melt 3 tbsp. butter. Add onion and celery, stir. Fry till onion is light brown. Add bread, pork chop spice powder, salt, and parsley. Stir.
  3. Remove pan from heat and allow to cool. Add cream and mix it well.
  4. Divide mixture into 4 portions, stuff each chop. Secure pockets with toothpicks.
  5. Melt remaining butter (2 tbsp.) in cooker. Brown chops on both sides and remove.
  6. Pour wine into pressure cooker, put grid in cooker and place chops on grid.
  7. Close cooker and bring to full pressure on high heat. Reduce heat and cook for 10 minutes.
  8. Remove cooker from heat and allow to cool naturally.
  9. Open the cooker and place chops on serving dish. Remove toothpicks, serve hot.

Pork Loin Roast 

Serves 6 Persons

Ingredient Name

Vegetable oil

2 tbsp.

Butter

1 tbsp.

Boneless Pork Loin

2 ½ lbs.

Onion - sliced

1 small (4 oz.)

Carrot - sliced

1 small (4 oz.)

Chicken Stock – fat removed

1 cup

Pork Marinade Spice 

1 ½ tbsp.

 Method of making Pork Loin Roast 

  1. Take ½ tbsp. marinade spice and rub the pork loin, keep aside for 10 minutes.
  2. Heat oil and butter in cooker for about 2 minutes. Add pork and brown evenly on all sides. Remove pork.
  3. To the remaining oil in cooker, add onion and carrot. Stir fry for about 2 minutes.
  4. Remove the cooker from heat and add ½ tbsp. marinade spice, chicken stock and put a grid in cooker. Place pork on grid and sprinkle remaining marinade spice over the pork.
  5. Close the cooker and bring to full pressure cooker on high heat. Reduce heat and cook for 45 minutes.
  6. Remove cooker from heat and allow to cool naturally.
  7. Open the cooker and place pork on serving dish. Remove grid and discard carrot.
  8. Return cooker to medium flame gas and boil till liquid is reduced to half. Stirring occasionally. Serve pork hot, accompanied with sauce.

Pork Vindaloo Curry 

Serves – 10 Persons

Whole Dry Red Kashmiri Chili – Soaked in water and vinegar for 2 hours

Onions - chopped

3 large (1/2 kg)

Pork – cut into 5 cm pieces

Vindaloo Curry Spice

3 tbsp.

 Method of Pork Vindaloo Curry

  1. Grind chilies, ginger, garlic, curry powder into paste, adding from time to time a little vinegar in which chilies were soaked till all the vinegar is used.
  2. Heat oil in cooker for about 3 minutes, add onions & fry till golden brown. Then add pork, ground paste & salt, stir fry for about 5 minutes and then add water, stir again for 1 minute.
  3. Close the cooker lid and bring to full pressure on high heat, reduce heat and cook for 8 minutes.
  4. Remove the cooker from heat and allow it to cool naturally.
  5. Open the cooker and serve hot with fresh coriander.

 Pork Spareribs with Beer and Honey 

Serves -3 Persons

Honey

Dry Mustard

Chili Powder

 Method of making Pork Spareribs with Beer and Honey 

  1. Divide ribs into 3 batches. Heat oil in cooker for about 2 minutes. Brown and remove each batch.
  2. Remove cooker from heat and drain off fat. Add ribs and remaining ingredients. Mix well.
  3. Close cooker and bring to full pressure on high heat. Reduce heat and cook for 20 minutes.
  4. Remove cooker from heat and allow to cool naturally.
  5. Open cooker and place ribs on serving dish. Keep hot.
  6. Drain off fat from cooking liquid. Return cooker to medium heat and boil till liquid is reduced to half, stirring occasionally. Pour over meat and serve hot.
